Authentic Chinese Food Recipe for The Best Gourmet Chinese Sausage – Lap Xuong and Fried Rice

The simplest method for cooking Chinese sausage is to place the links in the same pot (or rice cooker) in which you are cooking rice. The fatty sausage will both cook and flavor the rice.

Ingredients

Jasmine rice

Chinese sausage (lap Cheong)

Sweet Soy Sauce Ingredients

Cooking oil

Garlic cloves & shallots

Soy sauce

Dark soy sauce

Chinese rice wine Sugar

Water

Sesame oil

Step By Step

Let’s start by washing the rice grains first. Fill a pot halfway with rice and cover with cold water. Swirl the rice grains with your hands to loosen any extra starch. Washing removes extra starch from the rice, resulting in a light, fluffy, airy rice rather than heavy, sticky, and starchy rice. Turn the pot upside down and carefully pour out the water. Repeat twice more. Remove as much water from the pot as possible.

Pour in 2 3/4 cups of water.

Place the sausage on the rice. Increase the heat to high. Cover the pot and reduce the heat to low when the water near the edge of the pot begins to bubble for 18 minutes

Make the Sweet Soy Sauce.

When the rice is done cooking, remove it from heat and cover it with a lid. Allow it to sit for 5 minutes with the lid on to finish steaming.

Remove the sausages and set them aside to cool. Cut them into 1/2-inch thick slices diagonally. Place the sausages on top of the rice and drizzle with the Sweet Soy Sauce.

Sweet Soy Sauce

Add the oil, garlic, and shallot to a small saucepan. Reduce the heat to low and cook the garlic and shallot slowly until they begin to brown but do not burn. Remove the shallots and garlic with a slotted spoon and set aside, leaving the flavored oil. Stir in the dark & regular soy sauce and cook for 2 minutes, or until thickened.

Serve Sweet Soy Sauce on the side for drizzling.
